Divide the monthly fixed costs by the margin each cover leaves. The margin per cover is the average spend excluding VAT, minus the variable costs: food, drinks, consumables.
What are a restaurant's fixed costs?
The ones you pay with an empty dining room too: rent, salaried staff, basic utilities, accountant, insurance, software, loan and lease payments. Ingredients are variable instead, because they grow with the covers.
What variable cost percentage should I enter?
